ABSTRACT The demand for natural dyes is increasing worldwide due to the increased awareness on therapeutic and medicinal properties and their benefits among public and also because of the recognized profound toxicity of synthetic colors. consumer perception represents a serious problem for the food and cosmetics industries because to satisfy consumer demand and maintain business competitiveness, they need to replace synthetic colorants with natural colors. Bio colours are natural colours which are used as an alternative of artificial colorants Natural food colours are typically extracted from sources such as fruits, vegetables, spices, and herbs. They can be used in a variety of food products, including baked goods, beverages, confectionery, and processed foods. Some examples of natural food colours include beetroot extract, turmeric, spirulina and caramel. Bio colours are extracted from different food processing waste and used in different types of fortified foods. There is a huge demand of bio colour in India and also throughout the world. The natural pigments which are present in natural food colours are anthocyanin, carotenoids, betaines, phycocyanin etc. Different types of extraction methods are used for extracting the bio colour which are solvent extraction, supercritical fluid extraction, microwave assisted extraction etc. People become more health conscious nowadays and they preferred more of bio colours in food items rather than synthetic colour.
