Determination of Vitamin C Content in different fruit juices under different storage conditions using Iodometric Titration method

ABSTRACT The objective of this study was to determine the vitamin C content in various fruit juices subjected to different storage conditions using iodometric titration. Vitamin C, a crucial antioxidant, is sensitive to factors such as temperature, light, and storage duration. Samples of fruit juices (orange, mango, mixed fruit and apple) were stored under conditions including refrigeration, room temperature, and exposure to light for specified periods. The vitamin C content was quantified through iodometric titration, a reliable method based on the redox reaction between ascorbic acid and iodine. Standardized iodine solution was added to the acidified juice samples, and the unreacted iodine was titrated with sodium thiosulfate using a starch indicator. The concentration of vitamin C was calculated by the stoichiometry of the reactions involved. The results demonstrated significant differences in vitamin C stability across storage conditions, with refrigerated samples retaining the highest levels of vitamin C. This study highlights the importance of proper storage to maintain the nutritional quality of fruit juices.
