Microbial Enzymes: A Perfect Replacement of Toxic Chemicals Used By Various Industries

ABSTRACT This era of humans aspires to change from chemical domination to biological domination. Enzymes are the bio catalysts which are required by all living organisms for synthesis as well as the breakdown reactions. Enzymes are dynamic protein molecules, which can replace many harmful chemical reactions. By introducing these microbial enzymes which are excellent biocatalyst we can take a step forward to eco friendly technological processes. Enzymes technology is evolving rapidly from the last decade. Uses of enzymes in food are an age-long process but with the advancement of technologies with the wide range of applications are developed and are still being explored. Different types of microorganisms like bacteria, fungi and their microbial enzymes can be used in food production for enhancement of the taste and texture. These microbial enzymes have brilliant biochemical capabilities which proved themselves as an important part of present-day food industries. By the industrial use of these enzymes, the industries became advantageous as they scaled a huge economic benefit. Microbial enzymes are proved to be a game-changer to modern-day food processing as these microbial enzymes are cost-efficient, having no side effects which are generally shown by the inorganic and organic chemicals which were used in food processing and have the ability to show the constant production of different products. The use of these microbial enzymes has increased in various industries is due to their excellent features like they need low processing time, low energy input, non-toxic and are eco-friendly.
