Preparation and Sensory Evaluation of Iron and Calcium Rich Energy Bar Using Ragi and Kodo Super Food

ABSTRACT Millets, also known as "Sri Anya," are highly beneficial for health due to their rich nutritional value. Among these, Ragi and Kodo stand out for their high calcium and iron content. For school and college-age girls, who have increased needs for these nutrients, incorporating Ragi and Kodo into the diet can be particularly advantageous. In the context of modern dietary trends, including millets in daily nutrition is crucial for maintaining a healthy body. This research paper presents the development of an energy bar specifically designed for girls aged 15 to 25, using Ragi, Kodo, paneer, dates, jaggery, pumpkin seeds, black sesame seeds, and dry fruits.
