Development and Study of Low Calorie Biscuits Integrated With Butter Fruit, Date Seed Powder and Stevia

ABSTRACT The study begins by selecting avocado, date seeds, and stevia as key ingredients, each chosenfor its unique nutritional properties. Avocado, known for its heart-healthy monounsaturated fats, vitamins, and minerals, is integrated to enhance the biscuit's nutritional value. Date seed powder, a byproduct of date fruit processing, contributes antioxidants and dietary fiber to improve the overall health benefits of the product. Stevia powder, a natural, calorie-free sweetener, replaces traditional sugars effectively reducing the calorie content. The formulation process involves numerous experimental batches to optimize taste, texture, and nutritional content. The proportions of avocado, date seed powder, and stevia as well as baking conditions are systematically adjusted to achieve the desired product attributes. Sensory evaluations and nutritional analysis are conducted to assess the acceptability and health benefits of the final low-calorie biscuits.The results indicate that the low-calorie biscuits offer a balanced nutritional profile with reduced calorie content maintaining a pleasant taste and texture. The incorporation of avocado, date seed powder, and stevia powder brings health-enhancing properties to the biscuits, makingthem a potential snack option for health-conscious consumers.This research serves as a model for incorporating unconventional, nutrient-rich ingredients intoconventional snack foods contributing to the development of healthier snack choices. As the demand for low-calorie, nutritious options in the food industry continues to rise this study provides valuable insights into meeting consumer expectations for healthier, yet apealing, snack alternatives.
