ABSTRACT Whey, a highly nutritious by- product of the dairy industry, is often discarded, leading to environmental concerns. Despite being rich in high-quality proteins, lactose, minerals, and vitamins, whey is frequently disposed of, resulting in both economic loss and environmental pollution. Converting whey into functional beverages offers a sustainable and health-promoting solution. In recent years, the focus has shifted toward the effective utilization of whey in the development of value-added food products, particularly functional beverages that offer health benefits beyond basic nutrition.
