Microbial Amylases - A Review of Its Industrial Applications

ABSTRACT

The starch-hydrolyzing enzymes-Amylases are important industrial biocatalysts which are produced by microorganisms at commercial scale. Microbial amylases have various industrial applications owing to different enzymatic action on starch. On the basis of different hydrolytic actions, amylases are of three types namely; alpha-amylase, beta-amylase and glucoamylase. Because of versatile enzymic activities, amylases have various applications in baking, brewing, pharmaceutical, laundary, paper, textile and biofuel industry. Amylases break down starch releasing different hydrolytic products including glucose, maltose, malto-oligomer, dextrins etc. These products are exploited in variety of applications in food industry. This review paper focuses on the variety of industrial applications of microbial amylases.
